Game Day Turkey and Veggie Chili

Here’s another great recipe from the Kaiser Permanente website. Just in time for the Super Bowl, this chili is healthy and delicious, and can be made in large quantities. Chef Nikki Shaw, who attended our CBHC Family Reunion in 2013, provided this recipe at an event in California. It is just the right amount of sweet and savory, and the lean turkey meat keeps the overall calorie content reasonable.

Ingredients

½  pound sweet turkey sausage, casing removed
½  pound spicy turkey sausage, casing removed
1   cup onion, chopped
3   tablespoons fresh garlic, chopped
1   cup fresh (or frozen) corn
2   carrots, diced small
2   zucchinis, diced small
2   tablespoons chili powder
2   tablespoons cumin
1   teaspoon cayenne pepper
2   packs chili seasoning mix
3   tablespoons brown sugar (optional)
1   can tomato paste
1   28-ounce can Mexican-style stewed tomatoes
1   28-ounce can diced tomatoes
2   cups chicken broth
1   16-ounce can kidney beans, drained
1   16-ounce can chili beans, drained
½   cup brown sugar BBQ sauce

Directions

In a large heavy pot on medium-high heat, add turkey sausage, onion and garlic.  Cook for 10-12 minutes or until browned.  Drain fat off meat.

Add remaining ingredients, stir and bring to a simmer.  Reduce heat, cover and simmer on low for 30-40 minutes.  Adjust broth to desired thickness and seasonings to taste.
